3/4 cup rice
1 1/2 cups water
2 cups nondairy milk (I use vanilla almond milk)
1/3 cup sugar
dash salt
1/2 teaspoon allspice
1 teaspoon vanilla
1. Combine rice and water together in a large pot and bring to a boil. Once the rice is boiled, set to low and let simmer with a lid on until all the water is soaked up by the rice, 15-20 minutes.
2. Add milk, sugar, salt, vanilla and allspice to the rice. Stir and set stovetop to medium low. Stir occasionally, and cook for 10-20 minutes, until the consistency is thicker.
Serve warm right from the pot. Raisins and other add ins like nuts would also be good in this recipe; I just didn't have any at the time. If you chose to add such things, just mix them in with the milk, sugar, vanilla, and salt.
