1 homemade deli style seitan loaf [u]Au Jus[/u]:
3 tablespoons olive oil
1 small onion, minced
1 carrot, diced
1 cup vegan chicken broth
1 cup vegan beef broth
2 tablespoons vegan Worcestershire sauce
1 tablespoon hot sauce
2 sprigs fresh thyme
1 fresh bay leaf
sea salt, to taste
pepper, to taste
water (optional) 4 hoagie buns
vegan mayonnaise, to taste
1. In a pot, heat the olive oil on medium heat. Add the onions and carrots; saute until onion begins to brown. Add the rest of the au jus ingredients. If necessary, add enough water to cover 3/4th of the seitan log. Reduce heat to low and simmer heat for 30 minutes, basting and rotating the seitan occasionally. (Alternately, soak the seitan log in the au jus without heat.)
2. Remove and reserve the seitan and bay leaf. In a blender, blend the remaining au jus ingredients. Return au jus back to pot and add in bay leaf again, let heat on medium heat for 30 more minutes. Take out bay leaf before serving.
3. Split hoagie buns lengthwise 3/4th of the way, leaving a hinge. Slather on vegan mayonnaise on both sides of bun to taste.
4. Slice the seitan log into thin deli style slices. Add to hoagie and top with generous amounts of au jus.
