6-8 seitan patties (I use the Vegan with a Vengeance recipe)
2 cups water
1/2 cup soy sauce
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon garlic powder or 3 garlic cloves, cracked
1 bay leaf
3-4 whole peppercorns
sliced bread or rolls, to serve
vegan cheese, to serve
1. Chop seitan patties into bite-sized strips that will sit well on the bread/roll when you eat it.
2. If desired, you can marinate seitan, water, soy sauce, and spices overnight in a sealable bag in the fridge. The more it sits in the liquid and spices, the deeper the flavor. In the morning, pour it into the crock pot and go to work. When you get home dinner is ready!
3. If not marinating, put seitan in crock pot or stovetop pan along with the water, soy sauce, and spices. If using a stove top, let it simmer for about 1 hour. If you're using a crock pot, set it and forget it, on low.
4. To serve, preheat broiler. Drizzle some of the broth onto the bread/roll. Pile up the seitan on the bread, cover with cheese, broil until golden. Serve with a cup of the broth for dipping.
