2 tablespoons olive oil
1 onion, chopped
1 stalk celery, sliced
1 carrot, sliced
15 cremini mushrooms, sliced
3 garlic cloves, minced
1 yellow pepper, diced
2 cups chard, shredded
6 cups vegetable stalk
1 teaspoon thyme
2 tablespoons lemon juice
1 cup cooked orzo pasta
1. Saute onion, celery, and carrot in olive oil until onion is translucent and carrots are beginning to soften.
2. Add mushrooms, garlic, chard and yellow pepper and cook 5 more minutes.
3. Add vegetable stock, thyme, and lemon juice and cook until chard is soft. Add orzo before serving.
