1 1/2 cups whole wheat pastry flour
1 1/2 cups oats
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup oil (I use grape seed oil)
1/4 cup sugar
1/2 cup fresh orange juice
1 teaspoon orange zest

1/2-1 cup dried apricots
1. Preheat 375 degrees F. Grease 1 cookie sheet. In a bowl, mix flour, oats, baking soda, cinnamon and salt.
2. In a separate bowl, cream oil and sugar. Add orange juice, zest and egg replacer, and beat until creamy.
3. Stir wet ingredients into dry ingredients. Stir in apricots.
4. Drop tablespoonfuls onto prepared cookie sheet. Bake about 8-11 minutes, until slightly browned.
