4 cups organic corn kernels
1 cup avocado diced (1 large)
1 cup fresh chopped cilantro (1 bunch)
1 cup diced red pepper (1 medium)
1 cup finely diced vine ripened tomato (1 large)
2 tablespoons fresh lime juice
1 tablespoon minced serrano chili, or more to taste (about 1 chili)
1 tablespoon minced fresh garlic (2 to 3 cloves)
1 tablespoon cold pressed extra virgin olive oil
1 teaspoon Celtic sea salt, or more to taste
freshly cracked black pepper, to taste
1. Soak raw corn in hot water for a few minutes and then drain.
2. Toss with remaining ingredients, season to taste, and then get corny!
