1 slice whole grain bread
1/2 pound whole wheat pasta (I used penne)
1 (10 ounce) package frozen mixed veggies
1 (15 ounce) can beans (I used kidney beans), drained
1 1/2 - 2 cups vegan cheese sauce (I use a homemade nutritional yeast sauce)
1 handful canned fried onions
salt and pepper, to taste
1. Place your slice of bread in a 350 degree F oven to toast/dry out. Cook pasta according to the package instructions. Drain and set aside.
2. In an 8x8 casserole dish, add the frozen veggies, beans and pasta. Pour in the sauce and stir to cover all the ingredients. Taste for seasoning. Check on your bread at this time, it should be crunchy. If not, let it go for a bit longer.
3. When bread is done, crumble the bread on top of the casserole and sprinkle on the fried onions. Bake for about 30 minutes or until heated through.
Serve with a nice big green salad and enjoy!
