2 tablespoons ground flaxseed + 1/3 cup hot water
1 cup sorghum flour
1 cup almond flour
1/2 teaspoon sea salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup gluten free vegan chocolate chips (I use a brand called Enjoy Life)
1/2 cup coconut sugar
1/2 cup agave nectar
1/2 cup creamy almond butter (I use unsalted)
2 teaspoons vanilla extract
1. Preheat oven to 375 degrees F. Combine the flax seed and the hot/boiling water. Let sit. Meanwhile, mix together the dry ingredients and chocolate chips.
2. In a separate bowl, combine agave, almond butter, coconut sugar, vanilla, and flaxseed + water. Add the dry ingredients to the wet ingredients and stir well until combined.
3. Spoon onto cookie sheet and bake for 10-12 minutes.
I know that coconut sugar can be hard to find. Usually you can find it in health food stores or Whole Foods, but if you can't, then you can substitute with regular sugar.
