1 sweet potato
1 teaspoon vegan mayonnaise
1 teaspoon parsley
1/2 teaspoon ketchup
1/2 teaspoon vinaigrette dressing
1/4 teaspoon cinnamon
1. Submerge sweet potato half way in a bowl of water. Poke holes in the potato to vent.
2. Microwave on the highest setting 6 to 10 minutes, or until the potato is soft. Remove from the microwave and drain water from bowl.
3. Cut the potato into 10 pieces. Add the remaining ingredients to the bowl and mix thoroughly. Eat.
