oil spray
1 small eggplant or 1/2 large eggplant, chopped to bite sized pieces
1 small head cauliflower, chopped to bite sized pieces
salt, to taste
Bragg's liquid aminos, to taste
1/4 cup nutritional yeast
1. Preheat oven to 400 degrees F. Spray a 9x13 pan with oil. Spritz eggplant and cauliflower with oil. Sprinkle on just a little salt.
2. Shake on some Bragg's liquid aminos. Pour on the nutritional yeast and toss everything to coat.
3. Put in the oven and bake for about 30 minutes, until cauliflower can be easily pierced with a fork. You may want to toss once during baking.
The ingredients form a light cheesy sauce that coats the veggies. It took all my willpower not to eat the whole pan for dinner tonight.
