[u]Falafel[/u]:
1 cup canned chickpeas, rinsed
1/2 white onion, chopped
1 tablespoon flour
1 teaspoon cumin
1 teaspoon dried parsley
1/2 teaspoon garlic powder
salt and pepper, to taste
canola oil, for frying [u]Tzatziki Sauce[/u]:
1 cup vegan sour cream or plain vegan yogurt
1/4 cup cucumber, grated
1/2 teaspoon garlic powder
1/2 teaspoon salt
pepper, to taste
1. For falafel, grind up the chickpeas in a food processor. Add onion, flour, and seasonings (cumin, parsley, garlic powder, salt, and pepper). Keep processing until the mixture becomes a thick paste.
2. Heat canola oil in a small saucepan to about 350 degrees Fahrenheit. While the oil is heating up, take a golf ball sized about of the chickpea mixture, roll it into a ball, then slightly flatten it. Fry the patties in oil until they are golden and crispy.
3. For sauce, In a bowl, thoroughly stir together all sauce ingredients.
That's pretty much it! It's really simple but delicious! Hope you enjoy it.
