1/2 pound baby spinach (I use organic)
1/2 sweet onion, finely chopped
1-2 tablespoons olive oil
3 tablespoons whole wheat pastry flour
1 1/2 cups nondairy milk (I use soymilk)
dash nutmeg
salt and pepper, to taste
2 teaspoons nutritional yeast, optional
1. In a covered dish, microwave the spinach on high for 2 minutes. Turn spinach over and microwave for another 2 minutes. Set aside. In a sauce pan, heat oil on medium high, and saute onions until translucent [3 minutes].
2. Add the flour and stir for 1 minute. Add the milk and whisk or quickly stir until all dissolved, and the mixture begins to thicken [about 5 minutes]. Add nutmeg, salt/pepper, and nutritional yeast, if using.
3. Chop the spinach into 3/4" pieces and add to the mixture and heat through. When it starts to bubble again it is ready.
Serve as a dinner side dish or a fantastic breakfast over toast!
