1/2 (12-ounce) block frozen firm tofu
2 tablespoons soy sauce
1 tablespoon water
pinch sugar
pinch hickory smoked salt
small pinch smoked paprika (I use Spanish)
1 tablespoon nutritional yeast
1. Defrost the tofu and when still slightly frozen, slice as thinly as you can. Let it finish defrosting, then press between a paper towel to get as much water out of it.
2. In a heavy pan that is lightly oiled add the pieces of tofu like you are frying bacon. Only add as much as can be laying flat in the pan. Cook until browned on both sides and starting to get crispy.
3. In a bowl, mix together the soy sauce, water, sugar, hickory smoked salt, and smoked paprika. Once the tofu has browned, remove and drizzle with the soy sauce mixture, then toss the nutritional yeast over them. Return them to an oiled skillet to re crisp/re brown them. They will become crispy like bacon.
You can even crumble them to make bacon bits.
