2 small beets, peeled and shredded
1 carrot, thinly sliced
2 teaspoons olive oil
1 teaspoon balsamic vinegar
2 teaspoons fresh or 1 teaspoon dried basil
pinch salt
pinch pepper
Combine all ingredients in glass bowl and microwave 30 seconds. Chill and serve.
