3/4 cup quinoa
1 1/2 cups water
1 tablespoon vegan cream cheese
Handful nuts, chopped Ii used a mixture of natural pistachios and salted peanuts)
Handful sultanas
1/2 apple, diced Ii used granny smith)
sliced olives, to taste
squeeze lemon juice
pinch of cayenne pepper
Cook quinoa in water, as directed on package. Stir in vegan cream cheese while quinoa is still in the saucepan (so it melts). Add all the other ingredients, stir and enjoy.
