1 (14-ounce) container extra firm tofu
water
2 cups seasoned bread crumbs
oil for frying
1. Drain and press tofu. Cut tofu into 16 rectangular pieces. (I usually cut it in half lengthwise and then cut both halves into eight rectangles, mimicking a chicken finger.)
2. Moisten each piece of tofu with a SMALL amount of water and roll in breadcrumbs. You want the crumbs to stick to the tofu.
3. Drop into hot oil for 5 to 7 minutes, or until golden brown. Drain. We serve this with homemade fries and mustard. All the kids LOVE it.
