2 cups dry mung beans
4 cup water
1/2 cup millet
3/4 cup sugar
1 (15-ounce) can coconut milk
small tapioca pearls (optional. *Do keep in mind that these will swell after a while*)
black sesame seed powder (optional)
This is a very common dessert served in Chinese restaurants. The alternate version involves aduki beans.
1) Simmer the mung beans with the water for 1 hour, or until they're soft.
2) During the last 20-25 minutes, add millet.
3) Add sugar, coconut milk, and tapioca pearls and bring it to a quick boil before serving. Sprinkle black sesame seed powder when serving.
