2 tablespoons vegan margarine
Sea salt, to taste
2 cups diced carrots, precooked to al dente
1 1/2 cups frozen corn
1 large red bell pepper, chopped
1 large vidalia onion, roughly chopped
2 cups pea pods or snow peas, chopped into big pieces
1 ripe avocado, smashed smooth
1 cup vegan meatless ground crumbles
1 1/2 cups soba noodles, broken and cooked to al dente
1) Saute veggies in margarine and salt until soft. Add avocado and meatless crumbles. Cook until crumbles are hot and mixture is covered in avocado. Add noodles and enjoy.
