1-1/2 cups raw spinach, chopped and dried
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon salt (I use Celtic sea salt)
8 cherry tomatoes, halved
2 tablespoons raw sunflower seeds
1 teaspoon raw sesame seeds
2 tablespoons dried cranberries (or your favorite fresh or dried fruit)
juice of 1/2 lemon
1. Put the spinach in a bowl
2. Add the olive oil, balsamic vinegar, and salt. Massage the spinach in the ingredients, to get it dispersed nicely. (I found that it also gives a nice texture to the spinach.)
3. Add the halved cherry tomatoes, sunflower seeds, sesame seeds, dried cranberries
4. Lastly, sprinkle the salad with lemon juice. Eat, and Enjoy! :)
Source of recipe: I was playing around with the stuff i had in the refrigerator and somehow ended up with this salad! I've just become a vegan raw foodie recently and have been trying to come up with something new and delicious. Trust me, you will love this salad.
