1 tablespoon olive oil
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
1 medium tomato, chopped
1/2 cup yellow onions, chopped
3 garlic cloves, pressed
1/3 cup hickory smoke barbecue sauce
12 ounces vegan taco filling (I use El Burrito soy taco)
1. In a large nonstick pan, pour the olive oil. Add the yellow and red peppers, tomato, onion, and garlic.
2. Saute the vegetables for 5-10 minutes on low heat. Add the taco filling and barbecue sauce.
3. Stir together and heat. Add as the "meat" portion to your tortillas. Enjoy!
