1 handful kelp noodles
1/4 carrot
1/2 tablespoon grated ginger
1/4 red bell pepper
2 green onions
1 tablespoon soy sauce
1/2 tablespoon rice wine vinegar
1/2 garlic clove
1 tablespoon lemon or lime juice
1 tablespoon sesame oil
1/2 tablespoon olive oil
1 tablespoon almond butter
1 small handful beansprouts
Cashews, to taste
Red pepper flakes (to taste)
Sesame seeds (to taste)
1) Put the bean sprouts in a bowl. Grate the carrot and ginger and add to the bowl. Chop the red bell pepper into thin strips, chop the green onions into thin slices, and also add to the bowl. Add the kelp noodles on top of the veggies and mix together.
2) In a separate bowl, add soy sauce, rice wine vinegar, lemon or lime juice, sesame oil, olive oil, almond butter, red pepper flakes, and mix together. Mince garlic and add to sauce.
3) Pour sauce over kelp noodles and veggies, and toss together. Sprinkle on cashews and sesame seeds. Quick, easy, and tasty. A recipe you can't really screw up.
Note: This would go superb with some grilled tofu =)
