3/4 to 1 cup chili beans (mild, medium or hot)
2 whole wheat tortillas
1 cup lettuce (any dark green variety)
1 cup cucumber
1 tomato
Avocado (optional)
1/4 cup of white or red onion (optional)
1) Dice the cucumber, onion and tomato but leave the lettuce as it is. Chop the avacado into chunks of your size of choice.
2) Pour the beans into a bowl, cover, then heat in the microwave for 1 minute, take out and stir then heat for another 30 to 60 seconds (depending on microwave).
3) Heat the tortillas in the microwave for about 15 to 20 seconds.
4) Put the lettuce inside the middle of the tortillas then the beans, then the tomato, cucumber, onion and avocado. Fold the bottom over the filling and then the sides over the bottom. Yummy, that's all it takes!
This is a very simple yet tasty and filling meal that with a little help (depending on their age) kids could make for themselves. It's also good for when you have friends over because no one likes to be stuck with lots cooking when they'd rather be talking to their guests.
