1 cup light coconut milk
1 cup vanilla or plain soymilk
1/4 cup sugar
1 1/2 tablespoons arrowroot powder
1/2 cup flaked sweetened coconut
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon (optional)
1/4 cup raisins
1) Mix or whisk sugar, milks, and arrowroot in a saucepan. Cook over medium-high heat. Stir frequently, add in flaked coconut. Once the mixture starts to thicken (5 to 10 minutes), take it off heat. For thicker pudding add more arrowroot. Stir in vanilla and cinnamon if using. Stir in raisins and let pudding stand two minutes so that the raisins plump. The raisins add a nice tartness. Serve warm or chilled. Garnish with more flaked coconut if desired.
