1 sweet potato, cubed
1/4 to 1/2 cup chickpeas
1 clove garlic, minced
Your favorite chunky salsa
Fresh cilantro
Dash or two chili powder
1) Boil the sweet potato and chickpeas together for about 25 minutes or until tender. Drain. Transfer back to the pot or a bowl and add the garlic, salsa, and chili powder. Mash together until you get the consistency you want. Stir in fresh cilantro.
Source of recipe: I had this idea and it turned out too amazingly yummmy to not share! I have named it sweet chica mash because it's kind of like taking boring mashed potatoes and turning them into a fiesta. And there's no pic, but it actually looks a lot more appetizing than you'd think.
