1/2 cup vegan butter
1/3 cup vegetable oil
2 cups sugar
1/2 cup soymilk
2 teaspoon vanilla
1 1/2 cups whole wheat pastry flour
1 cup white flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
1/2 cup walnuts
1/2 cup raisins
2 teaspoons cinnamon
1) Preheat oven to 350 degrees Fahrenheit.
2) Mix margarine, oil, sugar, soymilk, vanilla until well blended. Add the flour, baking powder, baking soda, salt, oats, raisins, nuts, and cinnamon. Add more soymilk to make it sticky, if needed.
3) Oil a cookie sheet and drop the cookies onto it. Bake for 17 minutes and allow to cool before storing.
