3 ounces silken tofu
1/2 cup brown sugar
1/4 cup olive oil
1 1/2 cups whole wheat flour
2 teaspoons pumpkin seed oil
1/2 teaspoon baking powder
1/2 teaspoon cinnamon, optional
1 to 2 teaspoons ginger
handful dried cranberries, divided
1. Preheat oven to 350 degrees Fahrenheit. Grease a cookie sheet. Mix the tofu, sugar and oil until smooth.
2. Add in the rest of ingredients, except cranberries, and mix until it is doughy.
3. Plop teaspoon sized balls of cookie dough on prepared pan.
4. Press the dried cranberries into the top of the balls. Bake for 10-12 minutes.
