4 medium potatoes, peeled vegetable oil, as needed 1/2 teaspoon curry powder 1/2 teaspoon turmeric 1/3 teaspoon cayenne pepper pinch salt 3 1/2 tablespoons coconut milk 1/4 cup lemon juice handful parsley, chopped, optional handful sesame seeds
1. Boil or steam potatoes for about 20 minutes, or until done. Place potatoes in a pot and add a drizzle of oil. Mash with a potato masher. 2. Add seasonings, coconut milk and lemon juice. Stir and mash until liquids are integrated into the potatoes. 3. Stir in parsley and garnish with sesame seeds. Enjoy!
