1 1/2 cup loose packed fresh basil (when chopped)
3 cloves garlic
1/4 small onion (optional)
3 tablespoons olive oil
1 teaspoon vinegar or lemon juice
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1) Finely mince the garlic and onion. Finely chop the basil.
2) In small bowl, mix together the vinegar, salt, and pepper. Add the garlic, onion, basil, and oil. Stir until basil is all covered by liquids.
Best used fresh same day or the flavor starts to change. Keep refrigerated. Use in the next few days.
We use this as a garnish on cauliflower soup mostly. But it is also nice for adding to salad dressing or on garlic bread.
