8 wheat tortillas
cooking oil
1 can refried beans
1 can corn
1 envelope precooked brown rice (plain or flavored, but check ingredients if flavored)
4 oz. of your favorite vegan "cheese", diced
Spread refried beans on one tortilla. Sprinkle with rice, corn, and cheese. Top with a second tortilla. Set aside. Repeat until tortillas are all used.
Heat 2 tablespoons oil on medium in a skillet.
Place one quesedilla flat on the hot, oiled skillet. Grill until slightly crisp, then turn over and grill the other side.
Place the cooked quesedilla flat on a plate, and slice into 6 wedges (like a pizza.)
Repeat with all quesedillas. Then enjoy!
My kids love these because they are creamy, crispy, and mild. The corn is just something we tried and loved, and it became a permenent ingredient. You might try adding your own personal touches.
