5 to 6 grated carrots
1 small onion grated
1 jalepeno seeded and minced
Juice and zest of 1/2 orange
Juice and zest of 1/2 lemon
1/4 cup olive oil
1. Grate carrots and onions in foodprocessor.2. Finely mince jalepeno.3. Mix together citris juices (someday I plan to add lime juice to this also) and oil.4. Put all ingrediants in a resealable bag and refrigerate at least 6 hours before serving.
Travels really well and makes a colorful addition to side taples exspecially if you can get your hands on 'rainbow carrots'.
