1/3 cup brown sugar
1/3 cup regular white sugar
2 tablespoons vegetable oil
1/4 cup water, or more
1/4 regular applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 cup white (unbleached) flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups rolled oats
1/2 cup chocolate chips
1/4 chopped dry cherries
1. Preheat over to 375 degrees F. Grease a cookie sheet. In a large bowl combine: sugars, oil, water, vanilla, and applesauce. Sift in flours, baking soda, salt, andcinnamon.
2. Mix in oats and add more water, if needed. Fold in chocolate chips and cherries. Make sure batter is quite moist as oatmeal cookies can tend to be too dry.
3. Spoon onto pre-greased cookie sheet by dropping two tablespoons at a time, smush each down. Bake at five minute intervals untilbottoms of cookies are brown, being careful not to overbake.
4. When they look near done, smush down again so the chips melt and spread on top. As long as the bottoms are browned they are finished. Let sit on the hot baking sheet a couple minutes, then transfer to rack to cool.
