Chocolate layer:
1 cup flour
1 cup sugar
1/2 teaspoon baking powder
1/2 cup cocoa powder
1 cup nondairy milk
1 cup vegetable oil
1/2 teaspoon vanilla Coconut layer:
1 cup flour
1 cup sugar
3/4 cup shredded coconut
1/2 teaspoon baking powder
3/4 cup nondairy milk
3/4 cup vegetable oil
1/2 teaspoon almond extract
1/2 teaspoon vanilla
1/2 cup almonds, chopped
1. Preheat oven to 350 degrees Fahrenheit. Grease a 9x13" pan. In a medium-sized bowl, mix chocolate layer ingredients until smooth.
2. In another medium-sized bowl, mix coconut layer ingredients (except almonds) until smooth.
3. Spread 1/2 the chocolatey mixture into prepared pan. Spread the coconut mixture on top of the chocolate mixture evenly.
4. Stir the chopped almonds into the remaining 1/2 chocolately mixture and spread it evenly on top of the coconut mixture.
5. Bake 25-30 minutes. Cool 10 minutes before cutting into squares.
Source of recipe: I made this recipe myself while fooling around in the kitchen one day. My batch came out really good and was a hit with all of my non-vegan friends, but if you have any suggestions they're more than welcome.
