1 cup unbleached flour
1 cup whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup plus 1 tablespoon shortening
3/4 cup zucchini milk (see note)
1-3 tablespoons water
melted margerine (optional)
Preheat the oven to 400 degrees Fahrenheit.
Make your zucchini milk. Just peel a zucchini, cut into 1" squares and whirl it in the food processor adding ~1-2 tsp water to make it smooth.
Sift the dry ingredients together and squish the shortening into it with your hands until it's well incorporated and everything is nice and crumbly. Add your zucchini milk and stir until a nice dough forms. You may need a bit of water. I needed about a tablespoon.
Turn the dough out onto a floured surface and need it for a min or so. Pat the dough out until it's about 3/4" thick. Cut it into circles with a glass and put the biscuits on a cookie sheet.
You can brush them with melted vegan margarine like Vegan Dad says, but I don't.
Bake for 10-13 minutes.
Sigh with joy as you eat.
