2 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 medium-sized very ripe bananas
1/2 cup nondairy milk (I use soy)
1/4 cup applesauce
3/4 cup vegan sugar
1 teaspoon vanilla
1 cup chocolate chips
1. Preheat oven to 350 degrees F. Lightly oil a 9x5 inch loaf pan and set aside. Mix together the flour, baking powder and salt.
2. In a food processor, combine bananas, milk, applesauce, sugar and vanilla. Process until you have a smooth consistency.
3. Add this to the flour mixture and mix well. Stir in the chocolate chips.
4. Transfer the batter to the oiled loaf pan. Bake until a toothpick inserted in the center comes out clean, about 50-60 minutes. Cool the loaf in the pan before removing it from the pan.
