1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup vegan sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons vegan butter, melted
1 teaspoon vanilla
1/2 cup unsweetened vanilla or chocolate nondairy milk (I use soy)
1 cup vegan chocolate chips
1 cup packed light brown sugar
1/4 cup unsweetened cocoa powder
1 3/4 cups boiling (make sure it's boiling) water
1. Preheat oven to 350 degrees F. Butter a 1 1/2 quart baking dish. Mix together flour, baking powder, salt, sugar and the 2 tablespoons cocoa powder.
2. In a separate bowl, mix together melted butter, vanilla and milk. Add this to the flour mixture and mix lightly.
3. Add chocolate chips; stir. Spoon into baking dish. In a separate bowl, combine the brown sugar and the 1/4 cup cocoa powder.Sprinkle this over the batter.
4. Very carefully, pour the boiling water over the top of the batter. Bake for 30 minutes.
You should end up with a big brownie surrounded by hot fudge sauce. It's delicious on its own or with some vegan ice cream.
