1 tomato
1 handful shredded vegan mozzarella cheese
1/8 of 1 fresh basil leaf
Pinch Italian seasoning
Pinch garlic powder
1. Cut out the center of the tomato creating a basin or bowl in it.
2. Shred basil and mix with soy cheese, Italian seasoning, and garlic powder.
3. Fill tomato with the soy cheese mixture.
4. Microwave on high 1 minute 30 seconds or until cheese is melted and bubbly.
I guess this is kind of a tomato rejano, or however you spell that. But this is what happens when the mini fridge in my dorm is understocked.
