1/4 cup almonds
1/4 cup walnuts
1/2 cup pinenuts
1 1/2 cup chickpeas (canned or soaked)
1/2 cup breadbrumbs
2 tablespoons corn
1 tablespoon flaxseeds
1 teaspoon garlic powder
1/2 teaspoon curry powder
pinch of dried basil
salt & pepper to taste
1 teaspoon powdered agar-agar (or other binder, equivalent to 1 egg)
a little margarine for greasing & cornmeal for dusting the baking tray
Finely chop nuts in a food processor
Add everything else and pulse until well blended, but still chunky
Preheat oven to 180 degrees Celsius / 356 degrees Fahrenheit.
Rub a little margarine (or use a non-stick cooking spray, if you prefer) onto a baking tray. Sprinkle down some cornmeal
Divide the mix into 8 even portions. Very gently form into balls (about palm sized) * Note: don't roll them, as they will fall apart, but, just press into shape.
Flatten the balls onto the tray, neatening the edges by gently pressing and forming the paddies with your fingers.
Bake for 25 min.
Remove from the tray with a spatula, and enjoy them with your favourite sandwich or meal!
