3 sweet potatoes, cut into sticks (like fries)
1/2 tablespoon extra virgin olive oil
2 to 3 tablespoons brown sugar, or to taste, optional
1 teaspoon sea salt, optional
1. Preheat oven to 450 degrees F. Place sweet potato sticks in a 9" x 13" baking dish. Drizzle with the oil and toss until the bottom of the pan and the potatoes are coated.
2. Place in oven and bake for 15 minutes, or until they look golden brown on top.
3. Take them out and flip the potatoes over so the brown side is down. Sprinkle with the brown sugar and salt. Bake another 5 minutes, or until slightly golden on the other side.
4. Remove from oven, shift around a little in the pan, and enjoy!
These are great with a good spinach and fruit salad and pretty healthy. They're actually very good without the salt and sugar too.
Source of recipe: The restaurant I work at serves sweet potato fries, and I've always wanted to try them, but don't eat fried foods. I thought they would be good baked and much healthier.
