1 cup brown rice
1 head organic cauliflower
1/4 to 1/2 cup nutritional yeast flakes
1 cube organic, low-sodium vegetable broth (prepares 2 cups broth)
1/4 cup flour
2 cups water for rice, plus 2 to 2 1/2 cups for sauce
Salt and pepper, to taste
If you are sick and taking care of yourself, this is the easiest possible healing recipe I've had success with my own stomach on.
1. First, rinse and cook rice with 2 cups in your steamer.
2. Chop and soak cauliflower pieces in salted water. Rinse and steam.
3. To make sauce, bring water to a boil and drop in broth cube. Whisk to break up, add flour, whisk some more, and add nutritional yeast. Once smooth, here you can also add spices, garlic, mustard and/or lemon juice if you can handle it. Let simmer and whisk occasionally as sauce thickens.
4. Preheat oven to 350 degrees Fahrenheit. Make sure rice is done and cauliflower is tender as you like it. Once everything is done, mash/combine together in rectangular baking dish and bake for 20 minutes or so if you want a slight crusty top to it all.
Source of recipe: I modified this recipe from what everyone remembers as the comforting broccoli rice casserole their mom made. It is also bland and basic because I made it during my own bout with pneumonia. Great base or to make for a sick friend who can hardly keep food down but needs b-vitamins, fiber, and calcium.
