9 oz. udon noodles (or linguini)
1/2 cup peanut sauce
2 tablespoon raw sugar or sweetener
1/3 cup chopped dry roasted peanuts
1 medium English cucumber diced
cilantro chopped
Cook udon noodles (or linguini) per package directions, drain, rinse in cold water until noodles are cool.
In a large bowl combine peanut sauce and sugar. Mix well.
Add peanuts, cucumber, cilantro & noodles. Stir until well combined.
Let set in refrigerator until cold - a couple hours or overnight.
