1 - 15 ounce can garbanzo beans, drained (about 2 cups)
2 or 3 ripe heirloom tomatoes
2 avocados
6 to 8 cups baby spinach, trimmed if desire (about 1 bag)
Balsamic vinaigrette dressing, as desired
1) In a large bowl mix baby spinach, chopped tomatoes, and garbanzo beans. Cut avocado in half and slice in thin slices. Lay on top of salad.I have found if you mix them in with the salad they get all mushed up, it's not as appealing visually. Serve dressing on side.
It's so easy and really delicious.
Source of recipe: I had some perfectly ride avocades. I didn't want to take them from their natural state so i came up with a salad that is amazingly simple and requires little to no effort.
