5 apples, any kind will do, cored
1 block Mori Nu silken tofu
1/4 cup brown sugar (or to taste)
1 teaspoon cinnamon
1/2 teaspoon ginger
Roast apples in a hot oven (375 degrees Fahrenheit) in a baking dish until they "collapse" a bit--about 30 min depending on your oven. You can of course not core your apples, but that means fishing the stems and seeds out after, like I had to. Not worth the hassle.
Place the soft, roasted apples in a blender or food processor (or use an immersion blender and a bowl) and blitz until smooth. I didn't remove the peel, that's up to you. If you discard the peel it will make less creme. I like to think if I leave it in, I'm getting more nutrition.
Add tofu, sugar and spices and blitz again. Chill thoroughly.
Source of recipe: I made up this recipe to use up some apples when I was tired of apple butter. Amounts are very approximate depending on the number of people and apples you have.
