1/4 cup raw quinoa
1/2 cup water
2 tablespoons pineapple juice
2 tablespoons soy milk (plain)
1 tablespoon raisins (or snack size box)
1/4 cup canned crushed or tidbits pineapple
cinnamon to taste
Clean quinoa and boil in water until absorbed. Reduce heat and stir in pineapple juice, simmer. Add in raisins and pineapple.
Once quinoa and fruit has absorbed the pineapple juice add in the soy milk, sprinkle with cinnamon and stir. Remove from heat and serve or refrigerate for later.
This makes a delicious, filling and healthy one serving breakfast. Enjoy!
