3/4 cup whole wheat flour
1/4 cup all purpose flour
3-4 teaspoons cornstarch
dash of salt
cinnamon to taste (about 3/4 of a tsp.)
1 VERY mashed banana
1 cup soy milk
1/2 cup water
1 tablespoon brown sugar
2 tablespoons liquid sweetener (agave, maple syrup)
1 1/2 tablespoons vegan margarine, melted (earthbalance....)
oil/spray for crepe pan
First, mix the dry ingredients with the exception of the brown sugar.
Mix very well to mash down the corn starch (leaving no gross lumps in your crepes).
In a separate bowl, mash your banana till its smooth. reallllyyy smooth. blend with banana 1 cup soy milk, and brown sugar.
Slowly add into dry ingredients mixture, beating with a fork or whisk so no lumps are left.
Slowly add in water and veg. margarine(melted), then 2 tablespoons. sweetener. Beat so no lumps are present.
Pre-heat the skillet until hot on medium heat, add spray if it is not a cast-iron skillet. If skillet is cast iron, do not use spray.
Pour 1/4 cup. mix into pan. Crepe will cook very quickly, about 40 seconds, lift edges with spatula, (bubbles will pop on top, you will know its done, kind of like a pancake) flip and cook other side (about 40 seconds). Remove, and enjoy!
I ate these with guava jelly.... yum. i also cooked some peeled apples (covered, in maple syrup and cinnamon for about 7 minutes on medium heat) and rolled those up in there :)
Source of recipe: I had this massive crepe craving one day, and decided it was time for me to create a vegan crepe like no other. This is the first draft however.... so any modifications are welcomed.
