1 cup flour
1 tablespoon baking powder
pinch salt
2 tablespoons sugar
1/2 teaspoon cinnamon
1 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon powdered cloves
1 cup soy milk
2 tablespoons oil
2 tablespoons molasses (I used "light" molasses)
Mix the dry ingredients together in a medium bowl. Make a well and add the wet ingredients. Stir until to major lumps remain... some small ones are fine.
Heat a small frying pan over medium heat (use oil if you're not using non-stick... these pancakes are a little stickier than usual). Add about a 1/4 cup of batter to the pan, swirl, and let cook until bubbles form (and stay) in the center, about 2 minutes. Flip and cook on the other side.
Repeat with the rest of the batter.

* These pancakes also tend to cook a little faster than regular pancakes... keep an eye on them so they don't burn!* They wind up with only a light molasses flavor; add more to taste if you desire.
