2 or 3 cups cubed Peruvian blue potatoes
1 cup fresh green beans
1/4 cup diced red onion
2 tablespoons vegan mayonnaise
1 teaspoon brown mustard
1 teaspoon apple cider vinegar
salt, pepper to taste
All the quantities are approximate, so use your judgment.
I steamed the potatoes and green beans together, probably for 15 or 20 minutes. Just check them for tenderness. Once they were done, I drained them in a colander and ran some cold water over them. After that, you just toss them with the other ingredients, and voila - a colorful new spin on a simple classic.
