1 package tempeh
1 bag prepared broccoli slaw
1 medium onion, finely diced
about 1 cup vegan mayonnaise
2 tablespoons whole grain mustard
baby spinach
tomatoes, thinly sliced
pita bread or wraps
1. Slice tempeh into long slices and steam for about 10 minutes. Allow to cool and then cut into small cubes.
2. Place tempeh, minced onion, & broccoli slaw into a large mixing bowl and mix together.
3. Add mayo (I just eyeball the mayo, whatever consistency you like, I like it a little creamier than some) and whole grain mustard. Mix everything together until well blended. You can add any salt or pepper or other seasonings if you like.
4. Place a scoop of the tempeh mixture on the wrap with 3 slices of tomato and a small handful of spinach. Roll up and enjoy.
This is such an easy tasty sandwich. The broccoli slaw adds some more veggies without any extra effort, an easy way to sneak some in for those who are vegephobic!
