1 pizza crust, homemade or packaged
1 jar pizza sauce
2 cloves garlic, minced
1/4 med onion, thinly sliced
small bunch of fresh spinach
bunch of basil leaves, thinly chopped
4 vegan "chicken" patties (Boca Original Chik'n Patties), chopped to bite sized pieces
4-5 (or more) of your favorite vegan mozzarella cheese (I used tofutti)
I recommend that you make your own crust for this (we added fresh rosemary, thyme, and oregano to the dough, and it was amazing), but if you must, use a premade crust and brush with olive oil.
Assembly:
Spread 1/2 jar of pizza sauce on the crust. Then, add the garlic, onions, a layer of spinach, basil and the chicken patties. (Really, the breading on these is what makes the pizza fabulous. You may have to microwave them in order to cut them up.) Pour the rest of the sauce over the chicken, then top with however many slices you like of the mozzarella cheese. The Tofutti brand tastes like the cheese on school pizza once it melts, for real!
Bake according to crust instructions.
Die of enjoyment. This is a fork pizza, by the way. It's kinda big for just picking up and eating.
