4 servings of fusilli (penne, rotini, small shells, macaroni, etc.)
1/4-1/2 bag burger-style crumbles
tiny handful of meltable shredded cheese
2 tablespoons vegan butter
1/2 cup milk substitute
1-2 tablespoons vegan horseradish mustard or spicy deli mustard
1/2 cup nutritional yeast
garlic powder to taste (start at 2 teaspoons)
onion powder to taste
sea salt
as much black pepper as you can stand
1/8-1/4 teaspoon turmeric
1. Cook and drain pasta; leave in strainer.
2. Add cheese, butter, milk, mustard, and spices to pot; stir over lower heat until cheese is as melted as you want (I usually end up with some lumps still, since it's hard to melt).
3. Add yeast and stir.
4. Add crumbles (thawed or microwaved helps this go faster) and pasta; stir and add more milk or butter if needed.
4. It's ready! Try serving with salad.
This is a pretty basic, not-too-much-flavor recipe. For the cheese I use Follow Your Heart's Vegan Gourmet line, mozzarella flavor, and Morningstar Farms Grillers recipe crumbles. Try adding some of the following, depending on what you like:
-vegetable broth -hot sauce -paprika -crushed red pepper flakes -lemon pepper -olive oil -broccoli -chili powder -different cheese flavors -soy creamer -MSF chicken meal-starters (in place of "hamburger")
It's all about personalizing to fit your needs... let me know if you have other ideas.
Let me know what you think of those variations. And this is the first recipe I've ever created on my own from scratch, so please don't be too harsh. :)
