1 (6-ounce) bunch watercress, cut into bite-size pieces
2 cucumbers, chopped into 1/2" squares
2 tomatoes, chopped
1 small onion, chopped (optional)
1 teaspoon olive oil
salt, to taste
freshly ground pepper, to taste
1. In a bowl, combine watercress, cucumbers, tomatoes, and onion; toss to mix thoroughly.
2. Add olive oil, salt, and pepper; toss to coat.
3. Refrigerate for 20 min before serving. You can sprinkle chopped almonds on top when you serve it. Enjoy!
